It is what was deteriorating in the photo! I suppose 'stone inlayed into stone' would cover it. A post on some lovely architecture of the Marmluk period will follow, and this is a feature of it.
I could see the deterioration but wasn't sure what it was. Went and looked it up in the dictionary... 1. A joint between two pieces of building material formed by a notch and a fitted projection. 2. The notch or the projecting piece used in such a joint.
